Storage for chocolate and jelly

To ensure a long shelf life and good quality of chocolate, some storage considerations should be noted:

01 Chocolate and jelly are sensitive to moisture.

Chocolate should be stored in a dry place, and temperature shocks should be avoided.

Sugar bloom

If chocolate comes from a very cold storage environment into a very warm environment, condensation can form on the chocolate. In the moisture, the sugar in the chocolate dissolves. If the water then evaporates again, the sugar remains on the surface in large, uneven crystals. The chocolate gets a rough, uneven surface. To prevent sugar bloom, keep the chocolate away from moisture and avoid temperature shocks. If chocolate is brought from a cold environment into a warm one, it should be left in its sealed packaging until it has acclimatized.

Sugared jelly should not be exposed to high humidity, as sugar is hygroscopic. Otherwise, the jelly will become moist.


02 Chocolate is heat-sensitive.

An optimal storage temperature should be between 12°C and 20°C and should not fluctuate constantly. Otherwise, a phenomenon known as fat bloom can occur. Fat bloom usually involves cocoa butter.

Fat bloom

Fat bloom is recognizable by a very thin layer of fat crystals on the surface of the chocolate. The chocolate loses its shine, and a blotchy, soft, white coating forms. Fat bloom is a result of too warm storage or excessively fluctuating storage temperatures. Fat bloom is often mistaken for mold but has nothing to do with it. However, it only has a minimal impact on taste, as the fat crystals create an unusual sensation on the tongue.

Jelly also starts to sweat at high temperatures, and the jelly structure loses its durability. As it loses firmness, water can escape from the jelly structure, leading to moist jelly.

Similarly, mechanical pressure from the outside can damage the jelly structure, causing water to escape. Therefore, jelly should not be stored under pressure.


03 Chocolate is sensitive to odors.

White chocolate, in particular, easily absorbs foreign odors due to its high fat content (cocoa butter). It should be stored in an airtight, odor-neutral packaging and not near strongly smelling foods.


04 Chocolate is sensitive to oxidation.

It should not be exposed to light and should be packaged airtight.

Oxidation

When chocolate comes into contact with air and light, the so-called oxidation of the fats occurs. The result is a strong change in flavor and an unpleasant odor. To prevent oxidation, chocolate should be stored in dark and airtight packaging.

By following these storage recommendations, massive chocolate has the following average shelf life:

  • Dark Chocolate: approx. 2 years
  • Milk Chocolate: approx. 1.5 years
  • White Chocolate: approx. 1 year

Our processed products such as pralines and jelly have the following minimum shelf life:

  • Cream-Filled Pralines: at least 12 months
  • Liquid-Filled Pralines: at least 9 months
  • Chocolate-Covered Jelly: at least 12 months
  • Sugared Jelly: at least 9 months

The minimum shelf life date is indicated by an embossed stamp on the packaging.


Gluten-Free Products

These products from our range are gluten-free:

  • Chocolate Lollipops on a Stick (varieties: milk chocolate, white chocolate, milk chocolate with milk cream filling)
  • Chocolate-Covered Jelly
  • Sugared Jelly

Vegetarian Products

All BERGGOLD jelly products are 100% vegetarian – that is, without animal gelatin! Instead, we use agar-agar as a gelling agent, which is derived from algae (mainly red and blue algae). You can immediately recognize it by the “Veggie” label on the packaging. Our sugared jellies are even vegan. Many other products in our range are vegetarian/vegan. In the online shop, you can find the corresponding indication in the product descriptions.

Note on GMO Regulation

Our products are produced without genetic engineering and without genetically modified raw materials.

Accordingly, the products are not subject to labeling requirements under Regulation (EC) 1829/2003 of the European Parliament and of the Council of 22 September 2003 on genetically modified food and feed, based on our current knowledge.

Complaint

Dear Customer,

In the interest of our customers, we place the highest value on the quality of our products. Our range is subject to constant quality control and always leaves our facility in impeccable condition. Should there be any complaints in individual cases, we ask you to follow the steps outlined below to assist us in the smooth processing of your complaint:

Option A: Sending the Goods/Package with Complaint Form

  1. Please print out and fill out the Complaint Form. Filling out the complaint form is not a prerequisite for the effective exercise of warranty rights.
  2. Send the goods/package with the complaint form.
  3. Please send the return shipment to us free of charge.
  4. After inspection, we will immediately refund the legitimately complained-about goods and the postage incurred.
  5. The processing time for the complaint may take 2-3 weeks.

Option B: Complaint via Email with a Meaningful Photo

1. File a complaint via email without a form to ga@heinerle-berggold.de

Necessary information:

  • A meaningful photo showing the condition of the goods
  • Indication of the minimum shelf life date & batch number
  • Where the goods were purchased and at what price

2. Sending the goods is not necessary.

3. After inspection, we will immediately refund the legitimately complained-about goods.

4. The processing time for the complaint may take 2-3 weeks.

Frequently Asked Questions (FAQ)

Where can I get a specific BERGGOLD product?

It may happen that a BERGGOLD product is not available in the store where you usually shop. Unfortunately, we cannot specify exactly where you can obtain a specific BERGGOLD product, as we supply large retailers and supermarket chains, not individual stores directly. Which stores receive the products in detail is decided by the trade.

Tip: Perhaps ask the store manager of the store where you usually shop the product, even if it may not be in stock, it is listed there and could be ordered. They will surely be able to answer your question.

How can I get promotional material?

We are always pleased with the interest shown by our loyal customers, not only to taste our specialties/delicacies but also to use other items from our company in everyday life. However, such items are often produced only for specific promotional measures and cannot be purchased. Therefore, shipping promotional materials is unfortunately not possible

Does BERGGOLD send Info Material for School Projects or Theses?

We thank you for the inquiries and the interest shown in our company. Therefore, we have compiled extensive information on www.berggold-heinerle.de. Here you can find details about the individual products from BERGGOLD, information about production, and about the company.

Due to the large number of inquiries, it is unfortunately not possible for us to individually support projects.

How can I get BERGGOLD products to sample?

Unfortunately, we cannot send samples of our products – product samples are mainly distributed through promotions (e.g., tasting events in retail). The large number of inquiries would far exceed our capabilities.

Can I visit the BERGGOLD Chocolate Factory?

To meet the growing quality standards of our customers, we have been annually certified since 2003 through a quality audit according to IFS (International Featured Standard Food). These standards require particularly high safety and hygiene regulations; therefore, we unfortunately cannot offer tours of our production facilities. However, we would like to invite you to visit our small company exhibition. A visit can also be conveniently combined with a purchase at our factory shop.

At which Events/Fairs Can You Find BERGGOLD?

We present our products at various consumer fairs, including “OstPro” in Berlin and Erfurt and the “Grüne Woche” in Berlin. Additionally, we are annually present at the ISM (Internationale Süßwarenmesse) trade fair in Cologne. The dates are announced on our homepage.

In How Many Countries Outside Germany is BERGGOLD Still Represented with Its Products?

BERGGOLD products are distributed worldwide in their own packaging and under respective customer brands (Private Label).

Does BERGGOLD Also Sponsor Events and Associations?

We support numerous social and cultural projects/institutions in our region. Please understand if we have to decline. The multitude of inquiries from the entire federal territory that reach us almost daily cannot be covered by the available budget.
